Bourbon Chicken

Ingredients:
10 skinless, boneless chicken thighs
1 ½ teaspoon grated ginger (use microplane)
1 teaspoon (about two cloves) grated garlic (use microplane)
½ cup soy sauce
3 tablespoons minced onion
½ cup packed dark brown sugar
½ cup bourbon
¼ cup coconut oil
Black pepper to taste

Number of Servings: 4-6
Prep Time: 30 minutes plus 2-8 hour marinade
Cooking Time: 20 minutes

Directions:
– Cut thigh meat into 1 – 1 ½ inch pieces and place in a large bowl.
– Combine remaining ingredients (except for oil and black pepper) and pour over chicken. Stir chicken mixture to evenly cover all the chicken pieces. Cover bowl with plastic wrap or lid and put in the refrigerator for 2-8 hours.
– Heat the coconut oil in a large skillet over medium-high heat. Place marinated chicken pieces in the hot skillet – do not over crowd. You may need to do several batches, so you don’t over crowd the skillet. Let the chicken sit until they start to turn dark brown and then turn the chicken over and repeat until all sides are nicely caramelized – 2-4 minutes per side. Remove chicken with a slotted spoon and place in a serving bowl and sprinkle black pepper over chicken to taste. Repeat until all the chicken is done. Reserve the remaining marinade in the bottom of the bowl from the refrigerator.
– Using the same skillet from the chicken, carefully drain off the oil. Replace skillet on the burner of medium-high heat. Pour the remaining marinade into the skillet and reduce to a nice thick sauce while constantly stirring to prevent burning/scorching – 3-4 minutes. Pour sauce into a small bowl and serve with chicken.

Notes:
– Thigh meat is much better to use than breasts in this recipe because it holds up to the higher temperatures without falling apart or over cooking/drying out.
– If you do not have a microplane (I highly recommend one!) you can mince your garlic and ginger.  Click Here for a link to the one I use! The microplane makes the job so much easier and produces a nice product that incorporates well with the marinade without being too chunky.
